Method of preparation : Rinse the rice several times removing excess starch until the water is almost clear. Bring 2 cups water and 1 cup rice to a boil in a medium-sized pot. Cover the cooking pot with a tight-fitting lid, then reduce the heat to a simmer and cook for 20 to 25 minutes, until all the water is absorbed and the rice is tender. If the rice is still too firm, add a few more tablespoons of water and continue cooking for a few more minutes. Remove the pan from the heat and let it sit covered for 5 minutes.
