Incredibly nutty and mild flavor!
BIOVEGAN 's Organic Spelled Yeast Extract features a slightly nutty scent. Hildegard von Bingen already valued spelled for its high protein, vitamin and mineral content. The yeast is made from organic spelled.

Spelled Yeast Bread
Necessary ingredients for 2 loaves :
700 g of spelled flour
300 g of rye flour
2 sachets of BIOVEGAN Master baking yeast
2 teaspoons of salt
650 ml of lukewarm water
cooking oil for greasing the bread pan
Method of preparation : Mix all the dry ingredients well. Add 650 ml of water and knead for 5 minutes. Cover the dough and let it rest in a warm place for about 60 minutes. Then knead the dough again. Divide the dough in half and place in 2 greased loaf pans. Cover the dough and let it rest for about 30 minutes. Preheat the oven to 190 °C in a convection oven or 210 °C on top/bottom heating. Then bake the loaves with a bowl of water for approximately 60 minutes. After baking, turn the loaves over and let them cool completely on a wire rack.
Note :
- Organic spelled yeast extract cannot be used to make a starter culture.
- Sourdough itself has no rising power.
- For 1 kg of flour you need 2 sachets of baking yeast BIOVEGAN Master.
